Foodie Friday: roasted garlic soup

As you know (from my bewailing the fate of our poor tomatoes) we've had quite a few cool, windy days here.  Lots of rain.  Lots of drizzle and gray.

This roasted-garlic soup is the perfect antidote to one of those days.  Light enough for spring, but warming enough to combat the drizzle. Plus, it smells absolutely divine while the vegetables are roasting. Pair it with some crusty artisan bread and a green salad for a perfect meal.  As a bonus, this is one of the very few meals that all three of my children will eat eagerly--it is, in fact, my picky eater's favorite.  Even if you're not a garlic lover, roasting the cloves mellows them out into a velvety base that bears no hint of sharpness or tang.
