food creativity gone

nothing much to post other than i am sitting here trying to come up with menus for the next two months, and realizing that i have a very limited supply of minimal-preparation-required-meals. partially this is a function of the fact that abigail loves to cook and neil usually isn't home until six, so i've fallen into the habit of spending at least an hour preparing dinner to occupy us for that last zany hour where the attraction of the crayons and play-doh and stories have paled...but this also means that i am having trouble coming up with things to fix in those lovely weeks after i have the baby and we're still juggling schedules and trying to feed everyone with a minimal time input.

so this is my blogging plea. post a comment or a link or something that will lead me to a simple and tasty meal! i am an aficionado of the crock-pot or make-ahead-and-refrigerate-until-cooking variety of simplicity as well.

Rachael,

Do you have any food preferences, or are you open to anything? Let me know, I have a few ideas.

I think the very simplest meals are grilled meat or veg (which Neil can do when he comes home), baked potatoes, and steamed vegetables. When the girls were at camp and I was trying to push and get a lot of work done, we had quesadillas and fruit a couple of nights. Bread (which takes awhile bc of the rising, but actually very little hands-on time) cheese, fruit and steamed veg are good, too. Veg soup made one day and resurrected a couple of days later is good. And one time, at a Relief Society mtg where we were all asked to come up with a quick pick-up meal we do on a busy day, I'll never forget the sister who said "beans on toast." Her husband was British, and I finally understood that when I had an English breakfast. Speaking of which, pancakes, omelets, French toast are all fun for dinner. And, while David is not, I have always been a fan of frozen pizza. But a jar of pizza sauce, some cheese and toppings, and pitas or English Muffins are a quick, fun way to make pizza with Abigail after Neil gets home and can hold the baby.

Your mom had some great ideas. One thing I do when I'm lazy is make a quick pasta and bean salad. You can get as wild and crazy as you want with this or keep it really simple. Cook some pasta and chill it. Then just dump in different kinds of canned beans, corn, olives, even pineapple. You can cut up tomatoes or add some spinach. Anything you want. Then just dump your dressing of choice (or whip up a quick vinegarette). It's yummy, nutritious, and super low key. Grated or cubed cheese is good in it too!

Oh, and you can basically use a lot of the same ingredients and make a quick minestrone style soup too. Just add diced canned tomatoes with your pasta and beans, some spices and you're good to go!
