as an amendation to my earlier post, let me say that i am completely worn out by this day and am far from feeling very productive. instead i mostly think "where did the day go today? i never once got a chance to sit down" and i mostly just wish i were going to bed, but i still have to clean the bathrooms (put off to process all of the produce we were blessed/cursed with from our garden tonight). oh well. at least i have lots more freezer bags full of beans, squash, and zucchini, and a healthy stash of peppers awaiting their turn under the broiler to be made into tasty roasted peppers.

note to self for future reference: the woman neil married who could accomplish a lot was also not eight and a half months pregnant with a two-year-old in tow. there. now i feel better. :-)

One of the challenges of the last few weeks of pregnancy is to balance the nesting instinct against the rational understanding that pregnant women have a limited amount of energy, which has to be rationed somewhat carefully. Good luck with the balancing act.

So, I also have zucchini and summer squash coming out of my ears. To freeze it, do you have to do anything other than cut it up and stick it in a zip-lock freezer bag?

These sites have some info on freezing zucchini: http://sdsd.essortment.com/preservingfood_rckr.htm, http://www.thriftyfun.com/tf676463.tip.html
Maybe we'll have fried zucchini tonight--it sounds tasty and decadent.
